Recipe:
Ingredients:
- For the calzone:
- 500g pizza dough (homemade or store-bought)
- 200g fresh spinach, sautéed with garlic and cooled
- 150g vegan mozzarella-style cheese, grated
- 2 tablespoons vegan cream cheese, herbed
- 1 teaspoon dried Italian herbs
- 1 tablespoon olive oil for brushing
- A pinch of salt and black pepper
- Chili flakes and fresh parsley for garnish
- For the red pepper dip:
- 1 roasted red pepper, skin removed
- 1 small garlic clove
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- Salt and pepper, to taste

Method:
1. Preheat your oven to 220°C (430°F). On a floured surface, divide the pizza dough into four equal parts. Roll each into a circle about 1/4 inch thick.
2. On one half of each dough circle, spread a layer of herbed vegan cream cheese. Top with sautéed spinach, a generous amount of vegan mozzarella, a sprinkle of Italian herbs, salt, and pepper.
3. Fold the dough over the filling to create a half-moon shape. Crimp the edges firmly to seal. Lightly brush the top of each calzone with olive oil for a golden finish.
4. Place calzones on a baking sheet lined with parchment paper. Bake for 18-20 minutes or until golden and puffy.
5. While the calzones bake, blend the roasted red pepper, garlic, olive oil, balsamic vinegar, salt, and pepper until smooth to make the dip.
6. Allow calzones to cool slightly before serving. Garnish with chili flakes and chopped parsley. Serve with the red pepper dip on the side for that perfect tangy kick.
