Recipe:
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 2 large tomatoes, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1/2 teaspoon chilli powder
- 500g fresh spinach
- 400g firm tofu, cubed
- 1/2 cup coconut milk
- Salt, to taste
- Fresh coriander, chopped (for garnish)
Method:
1. Heat the olive oil in a large pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
2. Add the finely chopped onion and sauté until golden brown, about 5-7 minutes.
3. Add the minced garlic and ginger, and cook for another 1-2 minutes until fragrant.
4. Stir in the chopped tomatoes and cook until they break down and form a thick sauce, about 7-10 minutes.
5. Add the ground coriander, ground cumin, garam masala, turmeric powder, and chilli powder. Cook for 2-3 minutes, stirring constantly.
6. Add the fresh spinach to the pan, cover, and cook until wilted, about 5 minutes.
7. Transfer the spinach mixture to a blender and blend until smooth. Return the blended spinach to the pan.
8. Add the cubed tofu and coconut milk to the pan, stirring gently to combine. Cook for another 5-7 minutes until the tofu is heated through and the flavours have melded together.
9. Season with salt to taste.
10. Garnish with freshly chopped coriander.
11. Serve hot and enjoy your vegan Palak Tofu!
