Recipe:
Ingredients:
- For the pesto:
- 2 cups fresh basil leaves
- 1/2 cup pine nuts
- 3 cloves garlic
- 1/2 cup nutritional yeast
- 1/2 cup extra virgin olive oil
- Salt and black pepper, to taste

- For the pasta:
- 400g spaghetti or your favourite pasta
- 1/2 tsp red chilli flakes (optional)
- Vegan parmesan, for garnish (optional)

Method:

1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving a cup of the pasta cooking water.

2. While the pasta is cooking, prepare the pesto. In a food processor, combine the fresh basil leaves, pine nuts, garlic, and nutritional yeast. Pulse until the ingredients are finely chopped.

3. With the food processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy. Season with salt and black pepper to taste.

4. In a large mixing bowl, toss the cooked pasta with the fresh pesto. Add a bit of the reserved pasta water to help the sauce coat the pasta evenly.

5. Serve the pesto pasta immediately, sprinkled with red chilli flakes and vegan parmesan if desired.
