Recipe
Ingredients:
- For the Paratha:
- 2 cups whole wheat flour, plus extra for dusting
- 1 cup fresh methi (fenugreek) leaves, finely chopped
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1 tsp salt
- 2 tbsp vegetable oil, plus extra for cooking
- Water, as needed to form a dough
- For the Spiced Yoghurt:
- 1 cup vegan yoghurt
- 1/2 tsp ground cumin
- 1/4 tsp red chilli powder
- Salt to taste
- A pinch of sugar (optional)
- To garnish:
- Fresh coriander leaves, chopped
- Red chilli flakes
Method:
1. Begin with the paratha dough by mixing whole wheat flour, turmeric, red chilli powder, salt, and oil in a large bowl. Add the chopped methi leaves and mix well.
2. Gradually add water and knead to form a soft, pliable dough. Let it rest for 20 minutes.
3. Divide the dough into equal portions and roll each portion into a ball. On a floured surface, roll out each ball into a thin circle, about 6 inches in diameter.
4. Heat a tava or flat pan over medium heat. Place the rolled-out dough onto the tava and cook until small bubbles appear, then flip. Brush lightly with oil and cook until both sides are golden brown, pressing gently with a spatula.
5. For the spiced yoghurt, mix vegan yoghurt with ground cumin, red chilli powder, salt, and a pinch of sugar until well combined.
6. Serve the hot parathas with the spiced yoghurt, garnished with chopped coriander leaves and a sprinkle of chilli flakes.
