TOFU NOODLE RAMEN 💚
This might be the tastiest ramen I’ve ever made. It’s so good it might just become a regular favourite in our household 👌💯😍
Deets:
Chestnut mushrooms, sliced
@tofoo tofu, cubed
2 tspn sesame oil/spray oil
Pak Choi, sliced
Noodles
Chilli oil (optional)
Spring onions, sliced
Red chilli, sliced
Black and white sesame seeds
Broth
2 garlic cloves, minced
1 tbspn miso paste
1 tbspn gochujang paste
2 tspn tomato purée
600ml vegetable stock
200ml soya milk
Method
* Stir fry the tofu in a deep bottomed pan with a little sesame or spray oil until crispy, then put on a plate to the side
* Do the same with the mushrooms
* Once the tofu and mushrooms are cooked and the pan is empty, add the minced garlic with a tbspn of water and cook for 2-3 minutes to soften
* Add the miso, gochujang and tomato purée, stirring to mix into a paste with a little of the vegetable stock
* Gradually add all the stock and the milk and cook over a medium heat for 5-10 minutes so that the broth can reduce a little
* Next add the noodles and let them cook and soften for a few minutes
* Serve the noodles in a bowl, adding the broth and topping with the tofu, mushrooms and sliced Pak Choi
* Garnish with a little chilli oil, the spring onions, chilli and sesame seeds
* Enjoy
