Eggs
1 onion very finely minced
Fajita seasoning
1/2 can kidney beans
Tomato pasatta
Tomato puree
Cherry tomatoes
1/2 of each colour pepper, diced
Finely dice the veggies and sautee off
Then add the tomato products, fresh tomatoes and seasonings and simmer slightly. You want the cherry tomatoes to burst slightly
Add in the kidney beans and cook for a further 5-10 mins. By now the sauce should be thicker
Make wells in the pan and add the eggs, use up to 2-3 eggs you can always keep half in the fridge for the next day
Cook until the eggs are done and garnish with fresh parsley 🌿
