TIAWANESE POPCORN CHICKEN
This recipe is really fun to make and will definitely satisfy any kind of fried chicken craving you have!
Ingredients
•450 g Boneless chicken thighs
•Marinade:
•1 tsp soy sauce
•1/2 tsp white pepper
•1/3 tsp salt
•2 cloves garlic mashed
•Flour batter
•1/3 cup All purpose flour
•1/5 tsp salt
•1/4 tsp 5 spice powder
•1/4 tsp baking powder
•50 ml water
•Sweet potato starch (can replace with 50% tapioca powder 50% flour)
•Seasoning
•1/3 tsp 5 spice powder
•1 tsp white pepper powder
•1/4 tsp salt
•Basil Leaves (as much as you want)
•Oil (for frying)
INSTRUCTIONS
•Dice chicken up into small pieces
•Put in marinade and let marinate for 15-20 mins
•Drench chicken pieces in the batter
•Coat chicken pieces with the sweet potato starch completely and let sit for 10 mins
•Combine to make seasoning
•Wash basil leaves and make sure they are completely dry
•Heat oil to 160-170 C
•Slowly put chicken pieces in 1 by 1 to fry
•Once they float to the top and are lightly golden brown take them out
•Allow oil to reheat back to 180 C
•Re fry chicken for 1-2 min until golden and crispy
•After taking out the chicken fry basil leaves till crispy
•Lastly, combine Seasoning with chicken and basil
