This Greek Salmon, Rice & Horiatiki Salad Bowl is where it’s at! So many fresh flavors and nourishment all in one bowl. The salmon is marinated in a lemon, olive oil, garlic and spices and air fried for a melt in your mouth delicious bite of goodness.

Greek Salmon Bites:

Ingredients:
- 1 pound salmon with skin removed, cut into 2 inch pieces.
- 3 tablespoons extra virgin olive oil.
- Juice of one lemon.
- 1 teaspoon garlic powder.
- 1 teaspoon dried oregano.
- 1/2 teaspoon ground black pepper.
- 1/2 teaspoon sea salt.

Add the cut salmon to a bowl along with the remaining ingredients. Toss to coat. Let marinate for at least 10 minutes. Place in preheated air fryer set to 375F. Cooking in batches if needed to prevent over crowding. Cook for 8-10 minutes until cooked through. Makes 2-3 servings.

Greek Horiatiki Salad.

Ingredients:
- 1/2 and English cucumber cut into 1 inch pieces.
- 1 medium tomato cut into 1 inch pieces.
- 1/4 cup green bell pepper, sliced.
- 1/4 cup red onion, sliced.
- 1/4 cup pitter Kalamata olives.
- 2 tablespoons capers.
- 1/2 cup feta cut into 1 inch cubes.
- 3 tablespoons extra virgin olive oil.
- 2 tablespoons red wine vinegar.
- 1 teaspoon dried oregano.
- salt and pepper to taste.

Add all the veggies to a bowl. Toss in the olive oil and red wine vinegar. Season with dried oregano, salt and pepper to taste. Makes 2 servings.
