Such a beaut #lowsynrecipe for a Spring Sunday. I’ve spend the day ticking off all the jobs on my list in the house .. shopping.. meal prep.. dog walking in the sunshine.
How was your Sunday?
RECIPE - serves 4 1.5 #syns
4 chicken breasts
2 apples cut into wedges
1 large onion sliced
100g lightest soft cheese (4)
4 tsp wholegrain mustard (2)
2 tbsp Chinese rice wine
3 large garlic cloves grated
350 ml chicken stock
Fry the chicken breasts until browned on each side 4-5 mins and set aside
Add the onion to the same pan and fry off for a few minutes until beginning to soften.
Add the stock, garlic, mustard, and rice wine vinegar to the pan and return the chicken. Simmering for around 10 minutes until the stock begins to reduce - turning the chicken over half way then add the apples and continue to simmer.
Once the chicken is cooked through, stir through the soft cheese and simmer for 2-3 minutes.
