STICKY GINGER TOFU 💚
Surely tofu is a food group in its own right; I’m pretty sure I eat it daily👌😍
Tonight’s Sticky Ginger Tofu is another banger, with the tastiest sticky sauce to give it a good kick 🤩
Deets:
Serves 2
1 block @tofoo tofu
Red pepper, sliced
Broccoli , broken into small florets
Spring onions
Stir fry sauce
1 tbspn @myvegan maple syrup
1 thumb size piece ginger, grated
2-3 garlic cloves, crushed (or garlic granules)
2 tbspn light soy sauce
1 tbspn dark soy sauce
1 tspn sesame oil
2 tspn cornflour
1 tbspn water
Method
- prepare your stir fry sauce by mixing all of the ingredients together and leaving to one side
- Cut the tofu into cubes or break into pieces and then stir fry in a little sesame or spray oil until crispy
- Add the vegetables and continue to fry for another few minutes, but make sure they still have plenty of crunch
- Pour over the stir fry sauce and continue to cook for a few minutes until it thickens slightly and has come up to temperature, coating all the tofu and veggies
- Serve the stir fry on a bed of steamed rice, garnish with sliced spring onions and red chilli and some black and white sesame seeds
