Creamy Lemon Herb Chicken with Sun-Dried Tomatoes & Spinach
Ingredients (2 servings):
• 2 boneless, skinless chicken breasts • Salt & pepper to taste • 1 tbsp olive oil • 2 garlic cloves, minced • 1/4 cup chopped sun-dried tomatoes • 1/2 cup heavy cream • 1/4 cup chicken broth • Zest and juice of 1 lemon • 1/2 tsp dried oregano • 1/4 tsp thyme • 1/4 cup grated parmesan • 1 cup baby spinach • Fresh basil for garnish (optional)
Instructions:
1. Season chicken breasts with salt and pepper. 2. In a skillet, heat olive oil over medium heat. Sear chicken until golden and cooked through. Remove and set aside. 3. In the same pan, sauté garlic and sun-dried tomatoes for 1 minute. 4. Add cream, chicken broth, lemon zest and juice, oregano, thyme, and parmesan. Simmer 3–4 min. 5. Stir in spinach and let wilt. Return chicken and simmer 2 more min until sauce thickens. 6. Garnish with fresh basil and serve with mashed potatoes or pasta.
