Cranberry relish • ½ cup fresh or frozen cranberries • 2 Tbsp orange juice • 1 Tbsp sugar (or keto sweetener) • Pinch of salt

Instructions 1. Bake shells – Place phyllo shells on a sheet pan; bake at 350 °F / 175 °C for 5 min until crisp. Cool. 2. Relish – Simmer cranberries, orange juice, sugar & salt 5 min until berries burst and mixture thickens. Cool completely. 3. Filling – Beat goat cheese, cream cheese, honey & orange zest until smooth. Pipe or spoon into cooled shells. 4. Assemble – Top each cup with 1 tsp cranberry relish. Garnish with thyme leaves and serve immediately.
