Ingredients:
* Cake: 1 cup stout beer (like Guinness), 1 cup unsalted butter, 3/4 cup unsweetened cocoa powder, 2 cups all-purpose flour, 2 cups granulated sugar, 1 1/2 tsp baking soda, 1/2 tsp salt, 2 large eggs, 3/4 cup sour cream or buttermilk, 1 tsp vanilla extract.
* Buttercream: 1 cup unsalted butter (softened), 3-4 cups powdered sugar, 1/4 cup strong brewed espresso (cooled) or 2 tbsp instant espresso powder dissolved in 1/4 cup hot water, 1 tsp vanilla extract.
Instructions:
* Prep: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
* Cake Batter: In a saucepan, heat stout and butter until butter melts. Remove from heat and whisk in cocoa powder until smooth.
* Combine: In a large bowl, whisk together flour, sugar, baking soda, and salt. In another bowl, beat eggs, sour cream, and vanilla.
* Mix: Slowly pour the warm stout mixture into the egg mixture, whisking constantly. Add this to the dry ingredients, mixing until just combined.
* Bake: Pour batter into pans and bake for 30-35 minutes. Let cool.
* Buttercream: Beat butter until creamy. Slowly add powdered sugar, then beat in espresso and vanilla until smooth and spreadable.
* Assemble: Frost cooled cake layers and stack.
