Easy Mexican Baked Salsa Chicken with Melted Cheese

MEXICAN BAKED SALSA CHICKEN 🌮🧀🔥

Okay but hear me out…

It’s 4 ingredients.
You barely have to think.
And everyone eats it.

This is my “I forgot to plan dinner but I still win” meal. Throw it in the oven, melt the cheese, done.

INGREDIENTS
• 600g skinless chicken breasts (or thighs/tenderloins)
• 30g (2 tbsp) taco seasoning
• 300g salsa (about 1 cup)
• 150g grated Mexican cheese blend

METHOD
Preheat oven to 180°C fan. Grease a baking dish.
Cut the chicken into smaller pieces and coat in taco seasoning.
Pop it in the dish and pour the salsa over the top.
Bake for 30 minutes.
Sprinkle over the cheese and bake another 5 minutes until melted and cooked through.

That’s it. No drama. No extra steps.
Serve with rice, mash or tortilla chips and call it a day.
