INGREDIENTS
• 500g zucchini, grated
• 2 tsp salt
• 100g (⅔ cup) self-raising flour
• 180g halloumi, grated
• ¼ cup spring onions, finely sliced
• 1 egg, whisked
• 2 tsp minced garlic (optional)
• Pepper, to season
• 2 tbsp olive oil, for frying
INSTRUCTIONS
Place the grated zucchini in a strainer, stir through the salt and leave for 10 minutes. Squeeze out all excess liquid.
Add the zucchini to a bowl with the flour, halloumi, spring onions, egg, garlic (if using) and pepper. Mix well.
Heat olive oil in a frying pan over medium-high heat.
Add heaped tablespoons of mixture, flatten slightly and cook for about 2 minutes each side until golden and crispy.
