If there’s a table of food and this is on it… everyone is hovering right here. Creamy, cheesy, smoky bacon goodness baked inside a crusty cob loaf. It’s gooey in the middle, golden on the outside and honestly impossible to resist.

This is the “just popping over” dish that turns into “who’s bringing this next time?” 😅

INGREDIENTS
• 1 tbs olive oil
• 250g bacon, diced
• 250g cream cheese, softened
• 120g (½ cup) sour cream
• 180g (¾ cup) cream
• 120g (1½ cups) cheddar and mozzarella, grated
• ½ cup spring onions, thinly sliced
• 1 large cob loaf (approx 450g)

INSTRUCTIONS
Preheat oven to 180°C (fan-forced).
Cut the top off the cob loaf and hollow out the centre. Place the loaf and torn bread pieces onto a baking tray.
Heat olive oil in a frying pan and cook the bacon until crispy. Drain on paper towel.
In a large bowl, mix the cream cheese, sour cream, cream, grated cheeses, spring onions and cooked bacon until combined.
Spoon the mixture into the hollowed loaf and place the lid back on top.
Bake for 30 minutes or until hot and gooey, stirring every 10 minutes for even heating.
Serve immediately with the toasted bread pieces (and watch it disappear).
