CHICKEN RISSOLES šŸ”šŸ§€šŸ„•

These are the ā€œeveryone actually eats dinnerā€ rissoles.
Juicy, cheesy, packed with sneaky veg… and on the table FAST. Perfect for busy nights, lunchboxes, and freezer back-up plans.

INGREDIENTS
• 1 brown onion
• 1 carrot
• 1 small zucchini
• 120g cheddar/tasty cheese
• 500g chicken mince
• 45g (¾ cup) panko or breadcrumbs
• 1 egg
• 1 tbsp chopped chives or parsley
• Salt + pepper
• Olive oil, for cooking

METHOD
Grate the onion, carrot, zucchini and cheese into a big bowl.
Add the chicken mince, breadcrumbs, egg, herbs, salt and pepper. Mix really well.
Scoop about 2–3 tablespoons of mixture and shape into balls. Flatten slightly.
Heat olive oil in a pan over medium heat.
Cook rissoles for 4–5 minutes on one side, flip, then cook another 4 minutes (until cooked through).
Repeat with the remaining mixture.
