creamy Chipotle shrimp🍤
-thaw & pat dry 1lb Trader Joe’s raw Argentinian red shrimp
-season with southwest chipotle seasoning, garlic powder, & cayenne pepper
-in a food processor or blender, combine: 1/4 cup plain nonfat Greek yogurt, 2 chipotle peppers, 2 tbsp honey (or more for less spice), cilantro, 2 large garlic cloves, juice from 1/2 a lime, salt & pepper
-cook shrimp on medium heat for 1-2 mins on each side in olive oil
-toss shrimp in creamy chipotle sauce after cooking
onions & pepper blend:
-slice 1 orange bell pepper & 1/4 a red onion
-cook in light olive oil on medium heat
-season with southwest chipotle seasoning
-stir in 1 cup Trader Joe’s roasted corn
-season with “everything but the elote seasoning”
-stir until soft (5-7 mins)
guacamole🥑
-2 mashed mini avocados
-1/2 a jalapeño (about 1 tbsp)
-2 tbsp red onion
-1 tbsp cilantro
-lime juice & salt to taste

-3 medium Roma tomatoes, seeds removed
-1 jalapeño
-1/4 a red onion
-juice from 1/2 lime
-1-2 tbsp cilantro
-salt & pepper to taste
cilantro lime rice🌿
-cook 2 cups white rice according to instructions
-stir in 2 tbsp cilantro, juice from 1 lime, and salt
