Mediterranean Bliss: Feta, Olive, and Herb Greek Salad

simple, vibrant, and always satisfying. I love loading mine up with juicy tomatoes, plenty of feta, and both Kalamata and Castelvetrano olives for extra flavor. You can use cherry tomatoes or big, ripe ones like I did here. Don’t forget a generous drizzle of good-quality olive oil to bring it all together!
Ingredients:
2 large ripe tomatoes
1 Bell Pepper
3 Persian Cucumbers
1 small Red Onion
1/4 cup Kalamata Olives
1/2 cup Feta (chunks or crumbled)
1/4 cup Castelvetrano Olives
Large handful Fresh Parsley, chopped
Dressing:
1/3 cup olive oil
1 tablespoon Za’atar
1 tablespoon oregano
Salt and pepper to taste
Optional: squeeze of lemon before serving
