Recipe:
Ingredients:
• 400g macaroni pasta
• 3 tablespoons vegan butter
• 3 tablespoons all-purpose flour
• 700ml unsweetened almond milk
• 200g vegan cheddar cheese, shredded
• 1 teaspoon mustard powder
• 1/2 teaspoon paprika
• Salt and pepper, to taste
• 4 tablespoons nutritional yeast (for a cheesy flavour)
• 2 tablespoons vegan breadcrumbs
• Vegan BBQ sauce, for drizzling
• Fresh chives, chopped, for garnish
Method:
1. Cook the macaroni according to the package instructions until al dente. Drain and set aside.
2. In a saucepan, melt the vegan butter over medium heat. Stir in the flour to create a roux, cooking for 2 minutes.
3. Gradually whisk in the almond milk, avoiding lumps. Cook until the sauce thickens, about 5 minutes.
4. Lower the heat and add the vegan cheese, mustard powder, paprika, salt, pepper, and nutritional yeast. Stir until the cheese melts into a smooth sauce.
5. Fold the cooked macaroni into the cheese sauce, ensuring each piece is coated.
6. Transfer to a baking dish, sprinkle breadcrumbs over the top, and place under a grill for 3-4 minutes until the top is golden and crispy.
7. Drizzle vegan BBQ sauce over the Mac and Cheese and garnish with chopped chives.
