Recipe:
Ingredients:
- 4 blocks of firm tofu, pressed and cut into 'salmon' fillets
- 240g basmati rice
- For the marinade:
- 3 tbsp soy sauce
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 2 tsp liquid smoke
- 1 tsp apple cider vinegar
- 1/2 tsp ground paprika
- 1/2 tsp garlic powder
- 1/2 tsp sea salt
- 1/4 tsp ground black pepper
- For the garnish:
- 1 red chilli, finely sliced
- A handful of fresh parsley, chopped
- 2 tbsp vegetable oil, for frying

Method:
1. Prepare the marinade by whisking together soy sauce, olive oil, maple syrup, liquid smoke, apple cider vinegar, paprika, garlic powder, salt, and pepper in a bowl.
2. Marinate the tofu fillets in the mixture for at least 30 minutes.
3. Cook the basmati rice as per package instructions until it's fluffy and set aside.
4. Heat vegetable oil in a pan over medium-high heat. Add the marinated tofu and cook for 3-4 minutes on each side, until golden and crisp.
5. Serve the tofu 'salmon' atop a generous portion of rice, garnished with sliced red chilli and chopped parsley.
