I’m all for easy meal prep and that’s why traybakes are such a winner 👌😍
I’ve baked a big batch of harissa tofu and veg and served it with quinoa, steamed broccoli and a tahini dressing. It’s great for dinners or mid week lunches!

Traybake deets:
🌱 tofu ( @tofoo )
🌱 red onion 
🌱 red pepper 
🌱 courgette 
🌱 butternut squash 
🌱 chickpeas 
- prepare the tofu, chickpeas and veg as shown. Add 2-3 tspn harissa paste and mix into the ingredients to coat
- Roast in the oven and then leave to cool before assembling 😊
Dressing 
40g tahini 
1 lemon 
- whisk/stir some tahini and lemon juice with a little cold water until you have the required consistency for your dressing. Season with a little salt.
