Quinoa and Black Bean Salad
Recipe:
Ingredients:
1 cup quinoa
2 cups water
1 can black beans, drained and rinsed
1 avocado, diced
1 tomato, diced
1 lime, juiced
2 tbsp olive oil
Salt and pepper to taste
Fresh cilantro for garnish
Instructions:
Rinse the quinoa under cold water.
In a pot, bring the quinoa and water to a boil, then reduce to a simmer, cover, and cook for 15 minutes.
Let the quinoa cool, then fluff with a fork.
In a large bowl, combine the quinoa, black beans, avocado, and tomato.
Drizzle with lime juice and olive oil, then toss to combine.
Season with salt and pepper, and garnish with cilantro before serving.
