Burrata, roasted tomatoes with balsamic vinegar and good olive oil...never fails. Serve with crusty bread for the ultimate dinner 🍅🥖⚪️
For enough for 2:
Few handfuls of cherry tomatoes
1 large garlic clove, finely sliced
Large glug of olive oil
2 tbsp balsamic vinegar
1 burrata
Basil leaves to garnish
1. Set the oven to 180c. Cover the tomatoes in olive oil, vinegar and garlic and season. Mix well then roast for about 30 mins or until softened. Leave to cook for a bit then peel off the skin (optional but better)
2. Place the tomatoes and all the roasting juices on a plate, pop over the burrata and drizzle some of the olive oil over the burrata then top with basil leaves.
3. Serve with crusty bread to soak up the juices
