Lasagne soup

Ingredients
- 1 onion, diced
- 3 cloves garlic, minced
- 225g vegan mince
- 1 tsp mixed herbs
- 1 tsp oregano
- 1/2 tsp thyme
- Salt and Pepper to taste
- 2 tbsp tomato purée
- 1 pack passata
- 800ml vegan beef and veggie stock
- 10 Lasagne sheets broken up
- 1/4 cup vegan team
- 1/2 cup grated vegan cheese
Method
1. Start by frying your onion in olive oil before adding the garlic
2. Next, add the vegan mince and herbs
3. After 2 minutes, add the tomato purée, mix and add the passata and stock
4. Let the soup simmer for 5 minutes before adding the broken-up lasagne sheets
5. Cook until the lasagne sheets are al dente before adding the cream and cheese
6. Let it cook for another minute and serve with fresh basil.
