Easy air-fryer coconut tofu

An easy lunch or dinner that’s on the table in less than 30 minutes. Pieces of crispy air-fried, coconut-crusted tofu served on a bed of edamame rice.

So easy and tastes amazing 😍

Ingredients for the tofu:
280g block of tofu
2 tbsp soya milk
4 tbsp cornflour
Salt and pepper
1 cup desiccated coconut
Spray of oil

For the rice
2/3 cup of rice
1/2 cup frozen edamame beans
1/2 cup frozen peas
2 tbsp rice vinegar
2 tbsp soy sauce
Handful of fresh mint, chopped
1 tbsp agave
1 tbsp lime juice

1️⃣ To make the tofu, cut into triangles (about 1 cm thick). Put the milk and cornflour in one bowl and mix well. Put the coconut and some salt and pepper in another bowl
2️⃣ Dip the tofu into the cornflour mix and then into the coconut to coat each piece. Spray with oil and then air fry for 10 mins at 180C turning once. If you don’t have an air fryer you could easily pan fry too
3️⃣ Whilst the tofu is cooking, cook your rice as per packet instructions, adding the peas and edamame for the last few minutes
4️⃣ Once the rice and veg are cooked leave to cool slightly and then stir through the other ingredients, mix well and top with the coconut tofu

Serve with some black sesame seeds and some sweet chilli dipping sauce
