this is such a fun and satisfying breakfast. Hard-boiled egg grated over mashed avocado, topped with Parmesan, chives, salt, pepper, and chili onion crunch. Definitely a must-try combo.
Ingredients:
2 slices sourdough
1 small avocado
2 hard-boiled eggs
1 tbsp grated Parmesan
Squeeze of fresh lemon juice
1 tbsp finely chopped chives
Flaky salt + black pepper to taste
Chili onion crunch oil
Olive oil for toasting the bread
Instructions:
Boil eggs for 11 minutes, then transfer to an ice bath and let cool for 10 minutes.
Mash avocado with lemon juice and salt.
Toast bread in a pan with olive oil until golden.
Grate eggs over mashed avocado.
