Roasted Red Pepper & Feta Dip

Smoky roasted peppers blended with tangy feta, garlic, and herbs — a vibrant Mediterranean dip perfect with warm pita crisps or fresh veggies.



Ingredients (about 2 cups)
• 2 large roasted red bell peppers (from jar, drained)
• 4 oz (115 g) feta cheese, crumbled
• 2 Tbsp Greek yogurt
• 1 small garlic clove
• 1 Tbsp extra-virgin olive oil
• 1 tsp lemon juice
• ½ tsp smoked paprika
• ¼ tsp dried oregano
• Pinch of salt & black pepper
• Chopped parsley, for garnish



Instructions
1. Blend – In a food processor, combine peppers, feta, yogurt, garlic, olive oil, lemon juice, paprika, oregano, salt, and pepper. Blitz until mostly smooth (leave a little texture if you like).
2. Adjust – Taste and add more salt, lemon, or paprika as desired.
3. Serve – Spoon into a shallow bowl, swirl the top, drizzle a touch of olive oil, and sprinkle parsley. Serve with pita chips or crudités.
