Harissa Mushrooms, Za’atar flatbread with hummus & pesto!
This gorgeous juicy mushroom combo is just so good.

For the mushrooms;
4 portobello mushrooms cleaned
3 tbsp extra virgin olive oil
Juice 1/2 lemon
2 tbsp rose harissa paste
1/2 tsp maple syrup
To serve;
Flatbreads
Hummus of choice
Pesto
Toasted seeds
Fresh herbs
For the mushrooms;
Add the marinade ingredients to a large bowl/tub and mix well.
Add the mushrooms to the bowl with the marinade, carefully cover the mushrooms.
Cover and let it marinate for at least an hr.
To cook the mushrooms;
Pre heat the oven to 200c
Add the mushrooms along with any marinade to a baking tray.
Cook for a approx 20 minutes, until tender.
