Spicy Sausage Arrabiatta Spaghetti Delight

  • SAUSAGE ARRABIATTA SPAGHETTI

    Serves 2

    Ingredients
    • 200g spaghetti
    • 2 tbsp olive oil
    • 4 pork sausages (skins removed, broken into chunks)
    • 3 garlic cloves, finely chopped
    • 1 red chilli, finely chopped (or 1 tsp chilli flakes, adjust to taste)
    • 1 x 400g tin chopped tomatoes
    • 1 tbsp tomato purée
    • 1 tsp dried oregano
    • 1 tsp dried basil (plus extra for garnish)
    • ½ tsp sugar (optional, to balance acidity)
    • Salt & black pepper, to taste
    • Freshly grated Parmesan (optional, to serve)



    Method
    Cook spaghetti in salted boiling water according to packet instructions. Reserve 100ml pasta water before draining.

    Heat olive oil in a large pan. Add sausage chunks and fry until browned and cooked through. Remove and set aside.

    In the same pan, add garlic and chilli, frying for 1–2 mins until fragrant.

    Stir in chopped tomatoes, tomato purée, oregano, basil, sugar, and a splash of pasta water. Simmer for 10–12 mins until slightly thickened.

    Return sausage pieces to the sauce and stir through. Season with salt and pepper.

    Toss in drained spaghetti, adding more pasta water if needed to coat evenly.

    Serve hot with extra basil and Parmesan on top.
