Pesto Chicken and Broccoli Pasta Bake 🥦 I spent today meal planning and shopping. I’m finally back in the kitchen and cooking again. This was the perfect recipe to start with and we’ve got leftovers for later in the week.
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 (Serves 4)
• 1 White onion, diced
• 1 tsp @verylazyfooduk garlic
• 1 tsp Italian herbs
• 480g Chicken breast, diced
• 300ml @knorruk Vegetable stock
• 150g Soft cheese
• 60g Green pesto
• 240g Pasta
• 1 Head broccoli, cut into small florets
• 50g Parmesan
• Salt and Pepper to taste
• 40g Cheddar
• 10g Bread Crumbs
𝗠𝗲𝘁𝗵𝗼𝗱
1. Put on the pasta to boil for 10 minutes and after 4 minutes add in the broccoli florets.
2. To a pan add in the onion, cook for a few minutes until soft and then add in the garlic and Italian herbs.
3. After a further minute add in the chicken and cook through.
4. Add in the vegetable stock and soft cheese. Mix together and simmer for 5 minutes.
5. Mix in the parmesan (save some for when you serve), pesto, cooked pasta and broccoli. Season with salt and black pepper.
6. Transfer to an over proof dish before topping with cheddar, bread crumbs and a sprinkle of parmesan. Bake for 12-15 minutes.
7. Serve and ENJOY! 🍴
