Mozzarella Topped Chicken and Pesto Orzo ๐๐
This was honestly delish and inspired by something I saw @real.foodie post a while ago. I love a good orzo salad so I made extra to have for work lunches this week. Hit SAVE and give it a try! ๐
๐๐ป๐ด๐ฟ๐ฒ๐ฑ๐ถ๐ฒ๐ป๐๐ (makes 3-4)
For the orzoโฆ
โข Red onion, sliced
โข 220g Piccolo tomatoโs, halved
โข Italian herbs, garlic granules, salt and pepper to season
โข 300g Orzo
โข 60g Green pesto
โข 2 Handfuls rocket
For the chickenโฆ
โข 3-4 Chicken breasts
โข 60g Mozzarella
โข Salt and pepper to season

1. Add the onion and tomatoโs to a oven tray. Season with Italian herbs, garlic granules, salt and pepper before roasting on 180c for 20 mins
2. Meanwhile start boiling your orzo according to the instructions on the packet.
3. Slice the chicken breast in two widthways to create two thin fillets. Season with salt and pepper before pan frying in oil. Cook for 2-3 minutes on each side, until the chicken is cooked through.
4. Once cooked, remove from the pan, top with mozzerella and bake in the oven for 5 minutes, until the cheese is melted.
5. Once everything is cooked, itโs time to make the orzo salad. Mix together the orzo, roasted veg, green pesto and rocket.
6. Spoon out the orzo salad before topping with the chicken. Enjoy! ๐ด
