Chicken Satay Curry 🥘 This was one delicious meal! I can’t wait to make it again and I’m very glad I made leftovers.
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 (makes 4)
… for the chicken marinate
• 500g chicken fillets, cut into cubes
• 1tbsp curry powder
• 1tsp white sugar
• ½tsp salt
• 2tsp thai red curry paste
… for the peanut sauce
• 120g smooth peanut butter
• 1½tbsp sugar
• 2tsp curry powder
• ¾tsp salt
• 2tbsp thai red curry paste
• 2tsp dark soy sauce
• 300ml water
• 250ml coconut milk
… for the curry
• 100g Green beans, sliced in half
• Half red pepper, sliced
• Half yellow pepper, sliced
• White onion, sliced
… to serve
• rice
• roughly chopped peanuts
• roughly chopped coriander leaves
• sliced red chilli
• lime wedges
𝗠𝗲𝘁𝗵𝗼𝗱
1. Add the diced chicken to a bowl along with the marinate ingredients and 30ml of the coconut milk. Mix together, then set aside.
2. Add the peanut sauce ingredients together and whisk until combined.
3. Heat a pan on a medium heat and add in the marinated chicken. Fry off the chicken until cooked through and browned on the outside.
4. Add in the vegetables and fry off for 3 minutes.
5. Pour in the peanut sauce and simmer for 10 minutes until the veg is soft and the sauce thickens.
6. Top with peanuts, coriander and chilli. Then serve with rice, naan bread and a wedge of fresh lime.
