Smoked Salmon Avocado Toast with Lemon-Olive Garden Salad
Creamy avocado toast topped with silky smoked salmon, paired with a crisp cucumber and tomato salad with briny olives and fresh lemon this dish is fresh, satisfying, and beautifully simple.
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
For the Toast:
1 slice of whole grain or sourdough bread, toasted
½ avocado, mashed
2–3 slices of smoked salmon
Pinch of black pepper
Optional: squeeze of lemon or chili flakes
For the Side Salad:
½ cup mixed salad greens
¼ cup cucumber, chopped
¼ cup cherry tomatoes, halved
4–5 green olives
1 lemon wedge (plus extra for squeezing)
1 tsp olive oil
Salt & pepper to taste
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1️⃣ Make the Toast
Toast the bread until crisp. Mash avocado with a pinch of salt and spread it over the toast. Layer smoked salmon slices on top. Finish with cracked black pepper and optional lemon juice.
2️⃣ Prepare the Salad
Toss the greens, cucumber, tomatoes, and olives in a bowl. Drizzle with olive oil, season with salt and pepper, and serve with a lemon wedge on the side.
