Crispy Gochujang Tofu Delight with Cooling Rice and Cucumber

    For the tofu
    • 1 480g block firm tofu, pressed & cut into cubes
    • 2 tbsp cornflour
    - 1 tbsp oil
    • 1 tsp garlic powder
    • Sea salt, to taste

    For the sauce:
    • 2 tbsp gochujang
    • 2 tbsp toasted sesame oil
    • 1 tsp maple syrup
    1 tbsp tamari
    • 2 tbsp sesame seeds

    For the tofu
    Cut the tofu into bite-sized cubes.
    In a bowl, toss the tofu with cornflour, oil, garlic powder, and a pinch of sea salt until evenly coated.
    Preheat the air fryer to 200°C.
    Place the tofu in a single layer and air fry for 12-15 minutes, shaking halfway, until golden and crispy.
    In a small bowl, mix together gochujang, toasted sesame oil, maple syrup, tamari and sesame seeds.
    Once crispy, toss the hot tofu in the gochujang sauce until well coated.
