Crispy Salt and Pepper Shrimp
1 lb Large shrimp (peeled & deveined)
2 eggs
3 tbsp Cornstarch
1 tbsp cooking wine
1 tbsp light soy sauce
1 tbsp Oyster sauce
Chili powder
1 tsp Salt
1/2 tsp pepper
Marinate shrimp with 1 tbsp cooking wine, 1 tbsp light soy sauce, 1 tbsp oyster sauce, salt and black pepper. Mix well and let sit for 20 mins.
In another bowl, combine 3 tbsp cornstarch, 2 eggs, and a pinch of black pepper to form a batter.
Coat shrimp evenly with the batter.
Deep fry until lightly golden, then fry again until crispy and golden brown. Sprinkle with chili powder, salt and pepper before serving.
