Colombian-style Coconut Rice! 🥥

Meat of 1 coconut
2 cups of water
2 tbs of brown sugar
1/4 tsp of garlic powder
1/4 tsp of onion powder
1 cup of rice
1/4 tsp of salt
1 handful of raisins
1. In a blender, blend coconut meat with water.
2. Strain the blended coconut milk and save 1/2 cup of the coconut left behind
3. In a pot, add and combine your homemade coconut milk, the coconut left behind, rice, brown sugar, garlic, and onion powder, and salt. Cook rice until ready.
4. When rice is ready, add raisins and mix them in gently.
5. Enjoy with a splash of lime :)
