Guys I swear by the fact that a homemade curry is just as easy as jarred, but so much more wholesome and a million times tastier. šŸ˜šŸ•ŗ

Making your own curry paste might sound daunting, but it’s really just throwing all your aromatics into a blender, and it will taste so much brighter and fresher compared to shop bought.🌟🌱

Plus, you can make extra to freeze, so you have a ready made curry paste on hand for busier days!

This recipe uses my favourite ever fermented tofu for some super tasty plant based protein, and lots of veggies to keep things super nourishing. šŸ’ŖEnjoy! 🄰

Serves 2⁠
1/2 of the curry paste⁠
1 block fermented (or smoked) tofu @taifuntofu, pressed + cubed⁠
Olive oil @honest_toil or toasted sesame oil @mr_organic⁠
1 tin coconut milk @bionaorganic⁠
1/4 cup veg stock⁠
handful mangtout, sliced into strips⁠
1 large carrot, juliienne⁠
1 courgette, julienne⁠
Optional 2 handfuls of spinach ⁠
1/3 cup cashew, roasted @wholefoodearth⁠
Rice @tilda to serve⁠
⁠
CURRY PASTE - SERVES 4⁠
1 tbsp coconut oil @coconutmerchant⁠
2 spring onions, diced⁠
3 garlic cloves, roughly chopped⁠
1 inch ginger, roughly chopped⁠
1 red chilli, deseeded + chopped⁠
1 small lemongrass stalk⁠
2 tsp tamari soy sauce @clearspringuk⁠
2 tsp coconut aminos @coconutmerchant or use more soy + touch of maple⁠
1 tsp capers @bionaorganic⁠
1 tbsp cashew butter @meridianfoods
1/2 tsp ground turmeric @bartingredients⁠
1/2 tsp smoked paprika⁠
1/2 tsp ground cumin⁠
1/4 tsp black pepper ⁠
3 tbsp fresh coriander⁠
Zest of 1 lime + juice to serve⁠
