Making your own curry paste might sound daunting, but itās really just throwing all your aromatics into a blender, and it will taste so much brighter and fresher compared to shop bought.šš±
Plus, you can make extra to freeze, so you have a ready made curry paste on hand for busier days!

This recipe uses my favourite ever fermented tofu for some super tasty plant based protein, and lots of veggies to keep things super nourishing. šŖEnjoy! š„°
Serves 2ā 
1/2 of the curry pasteā 
1 block fermented (or smoked) tofu @taifuntofu, pressed + cubedā 
Olive oil @honest_toil or toasted sesame oil @mr_organicā 
1 tin coconut milk @bionaorganicā 
1/4 cup veg stockā 
handful mangtout, sliced into stripsā 
1 large carrot, juliienneā 
1 courgette, julienneā 
Optional 2 handfuls of spinach ā 
1/3 cup cashew, roasted @wholefoodearthā 
Rice @tilda to serveā

CURRY PASTE - SERVES 4ā 
1 tbsp coconut oil @coconutmerchantā 
2 spring onions, dicedā 
3 garlic cloves, roughly choppedā 
1 inch ginger, roughly choppedā 
1 red chilli, deseeded + choppedā 
1 small lemongrass stalkā 
2 tsp tamari soy sauce @clearspringukā 
2 tsp coconut aminos @coconutmerchant or use more soy + touch of mapleā 
1 tsp capers @bionaorganicā 
1 tbsp cashew butter @meridianfoods
1/2 tsp ground turmeric @bartingredientsā 
1/2 tsp smoked paprikaā 
1/2 tsp ground cuminā 
1/4 tsp black pepper ā 
3 tbsp fresh corianderā
