chickpea-tomato pasta with steamed broccoli 💛
Recipe ⬇️
1 small onion
1 can of chickpeas
2 tbsp tomato purée
1 can crushed tomatoes
salt and pepper
chili
paprika
oregano
pasta of choice
nutritional yeast
1️⃣ cut one onion into small pieces and fry them in a pot with olive oil.
2️⃣ put one can of chickpeas (without the aquafaba) in a blender and pulse three to four times, that you get a nice mixture with a few whole chickpeas left.
3️⃣ put the chickpea mixture in the pot , add some tomato purée and the spices. Also add a can of crushed tomatoes.
4️⃣ mix everything well and let it simmer for about 10 minutes.
5️⃣ in the meantime cook some pasta and also prepare the broccoli.
6️⃣cut the broccoli in florets and steam them for 6 minutes in a pot with a little bit of water.
7️⃣when the pasta is ready, the broccoli and the sauce should be ready too and you can serve everything with vegan Parmesan or yeast flakes!
