Wait till you try my new improved recipe. I played with tahini this time & it made such a flavorful difference. This bowl was eaten so fastโ€ฆit was that good๐Ÿ˜‹

Ingredients:
8oz package soba noodles, boiled, rinsed & drained
1 package tofu (I used organic sprouted tofu) drained & cut into cubes
1/4 cup Gochujang
3 tablespoons coconut aminos
2 tablespoons brown or coconut sugar
4 garlic cloves, minced
2-3 tablespoons tahini
3 tablespoons sesame oil
Salt n pepper to taste
1 bunch organic broccoli & itโ€™s stems, chopped

Optional toppings:
Basil leaves, torn
Sesame Seeds

Method:
Boil your soba noodles as per instructions on package. Rinse with cold water, drain & set aside.

Whisk all your ingredients up to the Salt n Pepper. Set aside.

In a large pan or wok, add avocado oil to heat. Now add your broccoli & cook mostly cooked but still firm. Mix in your Basil (optional) until itโ€™s wilted. Remove from pan & set aside.

Add a bit more oil to your pan & now itโ€™s time to cook your tofu until itโ€™s slightly brown.

Add your broccoli back into your pan & the gochujang sauce. Mix to combine & let cook for about 3 minutes. Serve & enjoy๐Ÿ’šโ€ผ๏ธ
