Serves: 2 to 3
1 cup broccoli florets, cut very small
ยฝ cup (packed) shredded red cabbage
ยฝ cup (packed) shredded carrot
1 package Angel Hair, drained and rinsed

Sauce:
Juice of 1 large lime
1 ยฝ tbsp ginger paste
3 tbsp reduced-sodium soy sauce
3 tbsp all-natural peanut butter
1 tsp toasted sesame oil
2 tsp rice wine vinegar (optional for more tang)
Chili garlic sauce to taste (optional for spicy heat)

Add broccoli florets, red cabbage and carrot to a mixing bowl. Squeeze out any excess water from the rinsed noodles and add to bowl. In a small bowl, add all Sauce ingredients and combine thoroughly with whisk or fork until creamy and smooth. Add to vegetables and noodles, and toss to coat. Top with extra chili garlic sauce if desired.
