SUPER-SEED ZUCCHINI OATS

SERVES 4
Ingredients
• 1 C unsweetened vanilla almond milk
• 3/4 C water
• 1 large zucchini, shredded
• 1 C GF old fashioned oats
• 2 TBSP hemp seed
• 4 TBSP flaxseed
• 3 TBSP chia seed
• 1/8 tsp salt
• 1 TBSP vanilla extract
• pinch of cinnamon or nutmeg
• 1 scoop vanilla protein powder (optional)
Method
1️⃣ Add all ingredients to a small sauce pan and simmer for 5-10 minutes until desired texture is reached. Remove from heat and let stand for 2-3 minutes.
2️⃣ Serve hot or cold with desired toppings - I love to add fresh fruit and some additional flax seeds for a crunch!
3️⃣ Store leftovers in jars for grab and go breakfasts all week long!
