Spiced Coffee-Rubbed Steak with Cocoa-Chili Butter

    Ingredients (Serves 2):

    For the steak:
    • 2 ribeye or strip steaks (about 10 oz each)
    • 1 tbsp finely ground coffee
    • 1 tsp smoked paprika
    • ½ tsp chili powder
    • ½ tsp brown sugar
    • Salt & black pepper
    • 1 tbsp olive oil

    For the cocoa-chili butter:
    • 3 tbsp unsalted butter, softened
    • ½ tsp unsweetened cocoa powder
    • ¼ tsp chili flakes
    • ½ tsp lime zest
    • Pinch of salt

    Instructions:
    1. Mix coffee, paprika, chili powder, sugar, salt, and pepper. Rub generously over steaks and let rest 20 min.
    2. Mix softened butter with cocoa, chili flakes, lime zest, and salt. Roll into a log, chill until firm.
    3. Heat a cast iron skillet until very hot. Add oil and sear steaks 3–4 min per side (for medium rare). Rest 5 min.
    4. Top hot steaks with a slice of cocoa-chili butter and let it melt into the meat.
