For the avocado fries: • 2 ripe but firm avocados • ½ cup flour • 2 eggs, beaten • 1 cup panko breadcrumbs • ½ cup grated Parmesan cheese • 1 tsp smoked paprika • Salt & pepper
For the lime-cilantro aioli: • ½ cup mayonnaise • 1 tbsp lime juice + zest • 1 clove garlic, minced • 2 tbsp fresh cilantro, finely chopped
Instructions: 1. Slice avocados into wedges. Dredge in flour, dip in egg, then coat with panko mixed with Parmesan, paprika, salt, and pepper. 2. Place on a tray and bake at 425°F (220°C) for 12–15 min, or fry until golden. 3. Mix mayo, lime juice, garlic, and cilantro to make the aioli. 4. Serve avocado fries hot with lime-cilantro aioli on the side.
