For the crust: • 2 ½ cups all-purpose flour • 1 tbsp sugar • 1 tsp salt • 1 cup cold unsalted butter, cubed • 6–7 tbsp ice water
For the filling: • 5–6 ripe plums, sliced • ½ cup brown sugar • 2 tbsp cornstarch • 1 tsp cinnamon • ½ tsp cardamom • ½ tsp vanilla extract • ¼ cup sliced almonds
Instructions: 1. Mix flour, sugar, and salt. Cut in butter until crumbly. Add ice water gradually until dough forms. Divide in two, chill 1 hr. 2. Roll out one disc, fit into pie dish. 3. Toss plums with sugar, cornstarch, cinnamon, cardamom, and vanilla. Pour into crust, sprinkle almonds. 4. Roll out second disc and cover pie, crimp edges. Cut slits for steam. 5. Bake at 375°F (190°C) for 45–50 min until golden and bubbly.
