Pomegranate Glazed Chicken with Pistachio Citrus Gremolata

  • 🍗 Chicken Breasts with Pomegranate Molasses & Pistachio Gremolata

    Ingredients (Serves 4):

    For the chicken:
    • 4 chicken breasts
    • 2 tbsp olive oil
    • 2 tbsp pomegranate molasses
    • 1 tbsp honey
    • 2 cloves garlic, minced
    • 1 tsp smoked paprika
    • Salt & black pepper

    For the pistachio gremolata:
    • ½ cup pistachios, chopped
    • Zest of 1 lemon
    • 1 clove garlic, finely grated
    • 2 tbsp fresh parsley, chopped

    Instructions:
    1. Mix pomegranate molasses, honey, olive oil, garlic, paprika, salt, and pepper. Coat chicken breasts and marinate 30 min.
    2. Sear chicken in a hot skillet until caramelized, then finish in oven at 375°F (190°C) for 10–12 min until cooked through.
    3. Combine pistachios, lemon zest, garlic, and parsley for gremolata.
    4. Serve chicken topped with gremolata, drizzled with pan juices.
