    Ingredients (Serves 4–6):
    • 2 medium beets, roasted and peeled
    • ½ cup creamy goat cheese
    • 2 tbsp Greek yogurt
    • 1 tbsp olive oil
    • 1 tsp lemon zest
    • Salt & pepper to taste

    For topping:
    • 1 tbsp honey
    • 2 tbsp pistachios, roughly chopped
    • A drizzle of olive oil

    Instructions:
    1. Blend roasted beets with yogurt, olive oil, lemon zest, salt, and pepper until silky smooth.
    2. Spread goat cheese on a plate in a rustic swirl.
    3. Spoon beet purée around and over the cheese, creating a marbled effect.
    4. Drizzle with honey, sprinkle pistachios, and finish with a little olive oil.
    5. Serve with warm pita, rustic bread, or veggie sticks.
