Ingredients (Makes ~14 cookies): • ½ cup (115g) unsalted butter • ½ cup (100g) brown sugar • ¼ cup (50g) granulated sugar • 1 large egg • 1 tsp vanilla extract • 1 cup (125g) all-purpose flour • ½ tsp baking soda • ½ tsp cinnamon • ¼ tsp salt • 1 ½ cups rolled oats • 1 cup fresh peach chunks (small, juicy pieces)
Instructions: 1. Brown the butter in a saucepan until golden and nutty, let cool slightly. 2. Mix browned butter with sugars, then add egg and vanilla. 3. Stir in flour, baking soda, cinnamon, and salt. 4. Fold in oats and peach chunks (the dough will be a little messy). 5. Scoop rustic mounds onto a baking tray. 6. Bake at 350°F (175°C) for 10–12 min until golden at edges but soft in the middle.
