Thyme-Infused Blackberry Honey Bliss Cake

  • 🍰 Rustic Blackberry & Thyme Honey Cake

    Ingredients (Serves 8–10):

    For the cake:
    • 2 cups all-purpose flour
    • 2 tsp baking powder
    • ½ tsp baking soda
    • ½ tsp salt
    • ½ cup unsalted butter, softened
    • ½ cup honey
    • ½ cup brown sugar
    • 3 large eggs
    • 1 cup Greek yogurt
    • 1 tsp vanilla extract
    • 1 tbsp fresh thyme leaves
    • 1 ½ cups fresh blackberries (plus a few extra for topping)

    For the glaze:
    • ½ cup powdered sugar
    • 2 tbsp honey
    • 1 tbsp milk

    Instructions:
    1. Preheat oven to 350°F (175°C). Grease and line a round cake pan.
    2. In a bowl, whisk flour, baking powder, baking soda, and salt.
    3. Beat butter, honey, and sugar until fluffy. Add eggs one at a time, then yogurt and vanilla.
    4. Fold in dry ingredients, thyme, and blackberries (gently so they don’t break too much).
    5. Pour into pan, bake 40–45 min until golden and set.
    6. Mix glaze ingredients, drizzle roughly over cooled cake. Top with a few blackberries.
