Instructions :
1. Brush eggplant slices with olive oil and season with salt and black pepper.
2. Heat a grill pan or outdoor grill to medium-high.
3. Grill eggplant slices for 4–5 minutes per side until tender and grill-marked.
4. Meanwhile, mix tomatoes, garlic, olive oil, lemon juice, parsley, salt, and black pepper in a bowl to make the dressing.
5. Arrange grilled eggplant on a serving platter.
6. Spoon tomato dressing evenly over the eggplant.
